Hi, I'm the person behind hsu chef. Kokoro means "heart" in Japanese — and that's really what this space is about: cooking with intention, simplicity, and a little bit of soul.

I grew up between two food cultures. My love of clean, honest flavors comes from Scandinavian cooking — rye bread, cardamom, foraged berries. My love of umami, balance, and quiet ritual comes from Japanese cuisine — miso, dashi, perfectly cooked rice.

This blog is where those two worlds meet. You won't find overly complicated techniques or impossible ingredient lists here. Just real food, made simply, with good tools and good ingredients.
